Not-boring salad

Found this recipe in a magazine today. I haven't tried it yet, but I'm going to. I am so-o-o sick of boring steamed vegies and plain old salads. It's not that I can't cook or have no imagination, more that I can't be bothered most of the time.

So, perhaps this would go well with tomorrow night's chicken:

Crunchy vegetable and peanut salad

1 Lebanese cucumber, cut into thin strips
1 carrot, cut into thin strips
1 green capsicum, you guessed it - cut into thin strips
1 1/2 cups bean sprouts, trimmed
2 green chillies, sliced
1 tbs finely grated ginger
juice of 1 lemon
1/3 cup chopped peanuts, toasted
Combine all ingredients except peanuts in a serving bowl. Season to taste and toss gently. Scatter peanuts over and serve.

Serves 6

Edit note 9th September : I've made this a couple of times, and it's pretty damn good!
