Psst..!
...Want a tasty and healthy meal that's ideal for breakfast, lunch or a snack? I made these cheesy broccoli pancakes the other day and they are sensational! I've just had the last lot for breakfast - you simply pop them in the toaster and in a couple of minutes your meal's ready.
I had them for lunch on the weekend with salad and chilli jam:

I'm having a lot of fun cooking at the moment - I hadn't realised how much of a rut I'd slipped into with my food. Sometimes all it takes is a few new recipes to spark things up and reignite your love affair with healthy food. Somebody smack me over the head next time I forget that, OK?
Here's an example of what I'm eating at the moment, in case you're interested. Today's menu:
Breakfast: Cheesy broccoli pancakes with a little chilli jam
Snack: Baked caramel-walnut pears with honeyed yoghurt
Lunch: Chinese style chicken stir-fry packed with veggies
Snack: An apple
Dinner: Tandoori chicken with steamed greens (probably broccoli and beans) & pappadums
Nothing boring about that lot - and it comes in at a smidge under 1200 Calories, so I have room for an extra snack if I'm hungry after dinner. You've gotta love that! :)

The baked caramel and walnut pears sound divine!
Mmmm mmmmm. I love cheesy broccoli and these look great. I really need to get a non-stick pan though. I have to use hepas of oil with everything or it just sticks like crazy and becomes cheesy, broccoli mush. :-/
You might want to check out the new study linking non stick cookware to heart disease.... I haven't had a chance to hunt it down yet; heard something on the radio this morning. :/
The pancakes looked good until I saw they included broccoli. I know it could be a way to get more veges into me, but.... I just couldn't go there.
